Review:

Honey Nut Chex:  We are big fans of this flavor of cereal here!  The box is already empty!

GF Yellow Cake Mix:
We love to make cupcakes using this!  Please see my previous review here.  

Chocolate Frosting:  This was delicious on top of the yellow cake mix muffins!  I usually make my own frosting by scratch but it was so nice to just open a container and have frosted cupcakes in a snap!

GF Brownies:  These were delicious!  The pan was gone in less than 12 hours! We will definitely need to pick up another box of these soon!

Lara Bar:  I absolutely love Lara bars!  They are so convenient and delicious!  I have not found a flavor yet that I don't like!  My son and daughter love them as well!   However my daughter did discover that she was not too fond of the lemon flavor!

Fruit Snack Variety Pack:  This was a big hit at our house!  I think all 4 of us dug into this box and quickly devoured it!

Potato Buds:  These were a great addition to my meatloaf!  They are a great replacement for bread crumbs!  I would also like to try them as a coating for chicken nuggets.

Gluten Free Bisquick:  This made the most delicious gf garlic cheddar biscuits!  You can find the recipe on here!

Italian Chicken Yum!



I was looking for more ways to use up food that I had on hand and Chicken Italian Yum was created!  This was delicious and my whole family enjoyed it!  It is very simple and cheap to make!

1 lb of chicken diced
1 box of gf noodles (elbow, macaroni or penne)
1 jar of pasta sauce
1 can of black olives
Mozzarella cheese (as much as you want!)

Cook the chicken in olive oil until no longer pink
Add cooked noodles, pasta sauce and black olives and simmer until warm.  Then add mozzarella cheese and stir, cook until cheese is melted.
ENJOY!

Betty Crocker Gluten Free Yellow Cake Mix!

Well, I finally caved in and bought a box of Betty Crocker yellow cake mix!  I was able to double a $1/1 coupon and paid only $1.85 for it!  It was really nice to have a easy mix to make instead of making it by scratch.


They turned out great and don't they look yummy?
My Son thought they were yummy!

I used the recipe for frosting off of the Nestle Toll House Cocoa container:
Chocolate Lover's Frosting
3 cups sifted powdered sugar, divided
2/3 cup Nestle Toll House baking cocoa
1/2 cup (1 stick) butter or margarine, softened
5 to 6 Tbsp. milk, divided
1 tsp vanilla extract
Beat 1 cup powdered sugar, cocoa, butter, 2 Tbsp. milk and vanilla extract in small mixer bowl until creamy.  Gradually beat in remaining sugar and milk until smooth.  Makes 2 cups.

Mexican Chicken Yum!

A few nights ago, I was trying to use what I had on hand to make dinner and Mexican Chicken Yum was created!  It smelled so good that I couldn't get a picture before the family dug into it!  

Mexican Chicken Yum
1 box of yellow rice
1 lb of chicken diced
1 can of Rotel tomatoes with lime and cilantro
1 can of black olives
Colby and Monterey Jack cheese to cover top 

Preheat the oven to 350.  Cook rice as directed on package.  Cook chicken in canola oil until cooked through.  Mix chicken, rice, black olives and tomatoes in a casserole dish.  Cover with as much cheese as you want ( we love cheese so the top was piled high with cheese!) and bake for 15 minutes or until cheese is melted.  Serve as is or with tortilla chips.

I hope you enjoy this as much as my family does!

The Resource Fair will feature allergy-friendly food and product companies from around the United States. Many will provide food samples, coupons and detailed information on product safety and benefits.


My family is looking forward to good samples and coupons!

Welcome to Delicious Gluten free meals on a budget!

Hello everyone!
My name is Becky and I have been gluten free for 5 years!  My daughter and I both have Celiac disease and must be gluten free.  We love delicious meals but must be on a budget.
