Fast, Fresh Meals in Five minutes- Using five ingredients or less Review & Giveaway!! 5 Winners!! ENDED!!

My life has been very busy with going back to work, taking care of the kids and working out 7 times a week I have had no time to blog let alone make a healthy delicious dinner!  Being able to make a healthy delicious meal in five minutes with 5 or less ingredients will help free up more time to do the things that I love!

I decided to add chicken and black beans to the rice and sauce to make a delicious filling for tacos!  I cooked up all of these delicious ingredients in the skillet and served them in a corn tortilla!  It was a great fast and healthy meal for my family!  I had taken several pictures of the process but my camera is not allowing me to transfer them to my computer!  Got to love technology right?

Kellogg's announces gluten free line!

Yep you read that right!  Kellogg's announced this week that they will be coming out with a gluten free line!  It sounds like it will include gluten free Rice Krispies and bars!  It sounds like there will be other items included as well.  You can read all about it and see a picture of gluten free Rice Krispies at Gluten Free Appetite.  This is very exciting news and hopefully other companies will follow suit!

Mexican Chicken Yum!

A few nights ago, I was trying to use what I had on hand to make dinner and Mexican Chicken Yum was created!  It smelled so good that I couldn't get a picture before the family dug into it!  

Mexican Chicken Yum

1 box of yellow rice

1 lb of chicken diced

1 can of Rotel tomatoes with lime and cilantro

1 can of black olives

Colby and Monterey Jack cheese to cover top 

Preheat the oven to 350.  Cook rice as directed on package.  Cook chicken in canola oil until cooked through.  Mix chicken, rice, black olives and tomatoes in a casserole dish.  Cover with as much cheese as you want ( we love cheese so the top was piled high with cheese!) and bake for 15 minutes or until cheese is melted.  Serve as is or with tortilla chips.

I hope you enjoy this as much as my family does!
